Raspberry and white chocolate mousse is an elegant no-bake dessert that balances the tartness of fresh raspberries against the creamy sweetness of white chocolate. Each spoonful has that light, airy texture of a proper mousse with enough richness from the white chocolate to feel genuinely indulgent. Melting the white chocolate gently — either over a double boiler or in short microwave bursts — and letting it cool before folding it into whipped cream is the key to a smooth mousse without lumps or a grainy texture. White chocolate is more temperamental than dark; it seizes if it gets too hot or encounters even a drop of water. Patience during the melting step saves the entire dessert. Fresh raspberries get layered in two ways: some are folded whole into the mousse so you hit pockets of bright tartness, and others are pressed through a sieve into a quick coulis that gets swirled on top. The contrast between the sweet, creamy mousse and the sharp raspberry is what makes this dessert work. Serve in wine glasses or small jars, chilled for at least two hours. A few fresh berries and a mint leaf on top finish the presentation.

Ingredients

  • 200 grams White chocolate
  • 200 grams Fresh raspberries
  • 1 cup Heavy cream
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Powdered sugar
  • 1 teaspoon Gelatin

Instructions

  1. 1Place the white chocolate in a heatproof bowl over a pan of simmering water. Stir until melted and smooth. Remove from heat and let it cool slightly.
  2. 2In a separate bowl, blend the raspberries into a puree. Strain to remove seeds and add the powdered sugar.
  3. 3Mix gelatin with 2 tablespoons of cold water. Let it sit for 5 minutes, then gently heat until dissolved.
  4. 4Whip the heavy cream with vanilla extract until soft peaks form. Gradually fold in the melted chocolate, raspberry puree, and dissolved gelatin.
  5. 5Divide the mousse into serving glasses and refrigerate for at least 2 hours to set.
