Mango Avocado Summer Rolls
Mango avocado summer rolls are a fresh, no-cook appetizer wrapped in translucent rice paper — light enough for a hot day but packed with enough flavor and texture to feel satisfying. Each roll is filled with ripe mango strips, creamy avocado slices, crisp vegetables, fresh herbs, and thin rice noodles, then dipped in a sweet-savory peanut sauce that pulls the whole thing together.
Rice paper wrappers can be tricky if you haven't used them before, but the technique is simple once you've done a couple. Soak each wrapper in warm water for about 10 seconds — just until it softens and becomes pliable, not until it's fully limp. It will continue softening as you fill it. Lay your fillings in a tight line across the lower third, fold the bottom edge over the fillings, tuck in the sides, and roll forward like a burrito. A snug roll is key — loose rolls fall apart when dipped.
The peanut dipping sauce is a must. Peanut butter, soy sauce, rice vinegar, sriracha, and a little warm water whisked together until smooth. These rolls are best eaten within a couple of hours of assembly — the rice paper dries out and gets tough if refrigerated too long.

Instructions
- 1Prepare the dipping sauce by combining peanut butter, hoisin sauce, soy sauce, lime juice, and chili flakes in a bowl. Mix well until smooth.
- 2Fill a shallow dish with warm water. Submerge one rice paper wrapper at a time for about 15 seconds until soft.
- 3Lay the softened wrapper flat. Place a lettuce leaf at the bottom third of the wrapper. Layer on mango, avocado, cucumber, carrot, mint, cilantro, and two pieces of shrimp (if using).
- 4Fold the bottom of the wrapper over the filling, then fold in the sides and roll it tightly away from you.
- 5Repeat with remaining ingredients. Serve immediately with prepared dipping sauce.
