- ● 2 tablespoons Olive oil

- ● 1 teaspoon Salt
- ● 1/2 teaspoon Black pepper
- ● 1 cup Quinoa
- ● 2 cups Water
- ● 1 cup Cherry tomatoes
- ● 1 medium Cucumber
- ● 1/4 cup Red onion
- ● 2 tablespoons Lemon juice
- ● 2 tablespoons Olive oil
Instructions
- 1In a bowl, combine lemon zest and juice, olive oil, garlic, parsley, mint, oregano, salt, and pepper. Add chicken breasts and marinate for at least 15 minutes.
