Dark chocolate sea salt tart is a study in restraint — just a few high-quality ingredients combined into something greater than the sum of its parts. A crisp, buttery shortbread crust holds a smooth, ganache-like chocolate filling finished with flaky sea salt that crunches against the silk of the chocolate. Every bite is rich, bittersweet, and deeply satisfying. The filling is essentially a ganache: heavy cream heated just to a simmer, poured over finely chopped dark chocolate, and stirred until perfectly smooth. The quality of chocolate matters enormously here since there's nothing to hide behind. Use a bar you'd happily eat on its own — something in the 60-70% cacao range with clean flavor. Callebaut, Valrhona, and Guittard all produce excellent results. The crust gets pre-baked until golden and fragrant, then the warm ganache goes in and the tart chills until set — at least two hours. The sea salt goes on just before serving so it stays dry and crunchy. Maldon flakes are ideal, but any good flaky sea salt works. Slice thin — this is intensely rich. A small wedge with a shot of espresso or a glass of red wine is one of the best dessert experiences you can put together at home.

  • 1 cup All-purpose flour
  • 1/2 cup Unsalted butter
  • 1/4 cup Granulated sugar
  • 1/4 tsp Salt
  • 1 Egg yolk
  • 1/2 cup Heavy cream
  • 6 oz Dark chocolate
  • 1 tsp Sea salt flakes

Instructions

  1. 1Preheat your oven to 350°F (175°C). In a bowl, combine flour, sugar, and salt. Add cold butter and rub in until the mixture resembles coarse crumbs. Stir in egg yolk to form a dough.
  2. 2Press the dough into a 9-inch tart pan. Prick the bottom with a fork and bake for 15 minutes or until golden. Let cool completely.
  3. 3Heat heavy cream over medium heat until just boiling. Pour over chopped chocolate and let sit for a minute. Stir until smooth to form ganache.
  4. 4Pour chocolate ganache into prepared crust and smooth the top. Sprinkle sea salt flakes over the ganache.
