The sauce is where this recipe separates itself from standard BBQ. Fresh peaches (or frozen, thawed peaches in the off-season) cook down with bourbon, brown sugar, apple cider vinegar, and a touch of chipotle until they collapse into a thick, glossy glaze. The bourbon doesn't taste boozy in the finished sauce — the alcohol burns off during cooking, leaving behind warm, vanilla-and-oak undertones that complement the peach sweetness. Blending the sauce smooth gives you a glaze that clings to the ribs without chunky pieces sliding off. Low and slow is the only way to cook ribs properly.   • 1 cup Peach preserves
  • 1/2 cup Bourbon
  • 1/4 cup Brown sugar
  • 2 tbsp Apple cider vinegar
  • 1 tsp Garlic powder
  • 1 tsp Onion powder

Instructions

  1. 1Preheat your grill to medium heat.
  2. 2Season the ribs with salt, pepper, and smoked paprika.
  3. 3Wrap the ribs in foil and place them on the grill.
  4. 4While the ribs cook, prepare the glaze by mixing peach preserves, bourbon, brown sugar, apple cider vinegar, garlic powder, and onion powder in a saucepan. Simmer until thick.
